Risotto

  • 1 cup sliced, fresh mushrooms
  • 2/3 cup long-grain rice
  • 1/3 cup chopped green peppers
  • 2 tbsp margarine or butter
  • 1 cup chicken broth
  • 1/2 cup water
  • 1/4 tsp dried sage, crushed
  • 1/8 tsp pepper
  • 2 tbsp grated Parmesan cheese
DIRECTIONS
  1. 1. In a medium sauce pan, cook mushrooms,rice,and green peppers in margarine until green pepper is tender
  2. 2. Remove from heat, stir in broth, water, sage, and pepper
  3. 3. Bring to boil; reduce heat
  4. 4. Cover, simmer about 15 minutes or until tender, Remove from heat
  5. 5. Let stand, covered, for 5 minutes
  6. 6. Fluff with fork, sprinkle with cheese
