Risotto

- 1 cup sliced, fresh mushrooms
- 2/3 cup long-grain rice
- 1/3 cup chopped green peppers
- 2 tbsp margarine or butter
- 1 cup chicken broth
- 1/2 cup water
- 1/4 tsp dried sage, crushed
- 1/8 tsp pepper
- 2 tbsp grated Parmesan cheese
DIRECTIONS
- 1. In a medium sauce pan, cook mushrooms,rice,and green peppers in margarine until green pepper is tender
- 2. Remove from heat, stir in broth, water, sage, and pepper
- 3. Bring to boil; reduce heat
- 4. Cover, simmer about 15 minutes or until tender, Remove from heat
- 5. Let stand, covered, for 5 minutes
- 6. Fluff with fork, sprinkle with cheese
