Roast Pork with Apple Honey Mustard Glaze

  • 3 lb pork loin roast
  • 4 Tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, chopped
  • 2 cups apple cider
  • 1/4 cup honey
  • 1 Tbsp dried oregeno
  • 1 tsp dried sage
  • 2 Tbsp Dijon mustard
  • 1 tsp lemon juice
  • 1 Tbsp worcestershire sauce
  • salt and pepper
DIRECTIONS
  1. Preheat oven to 350. Begin making the glaze by adding olive oil, onions, and garlic to a medium-size saucepan and cooking on high heat for 3 minutes. Add apple juice and cook until 1 cup of liquid remains, about 15 min.
  2. While the glaze is cooking, place a large saute pan on the stove top. On high heat, add 1 Tbsp of olive oil and sear pork on all sides for about 5 minutes. Place in oven and roast approximately 30-45 min.
