Roasted Onions with Blue Cheese
INGREDIENTS
- 4 large Vidalia or other sweet onion, sliced crosswise into inch thick slices. Do not separate layers
- 1/4 cup olive oil
- 4 ounces strong blue cheese like Cabrales, Gorgonzola or Stilton
- Sherry Vinegar
- Salt and pepper
DIRECTIONS
- Preheat oven to 400
- Rub both sides of onion slices with olive oil, arrange on baking sheet and sprinkle with salt and pepper.
- Roast, turning every 15 minutes, until brown on edges, about 45 minutes in my experience.
- Move onion to platter and sprinkle with crumbled cheese all over. Right before serving drizzle with sherry vinegar.
