Roasted Onions with Blue Cheese
  • 4 large Vidalia or other sweet onion, sliced crosswise into inch thick slices. Do not separate layers
  • 1/4 cup olive oil
  • 4 ounces strong blue cheese like Cabrales, Gorgonzola or Stilton
  • Sherry Vinegar
  • Salt and pepper
  1. Preheat oven to 400
  2. Rub both sides of onion slices with olive oil, arrange on baking sheet and sprinkle with salt and pepper.
  3. Roast, turning every 15 minutes, until brown on edges, about 45 minutes in my experience.
  4. Move onion to platter and sprinkle with crumbled cheese all over. Right before serving drizzle with sherry vinegar.
Adapted from Bon Apetit a few years ago. Great winter side, stands up well to big flavorful meat main dishes. I'm not a huge fan of onions personally, but these are phenomenal
