Roasted Red Pepper and Potato Hummus

  • 2 medium russet potatoes
  • 6-8 baby carrots
  • 1/4 of onion
  • 1 red pepper - roasted
  • 1/4 cup water
  • Optional:
  • 1/4 cup nutritional yeast
DIRECTIONS
  1. Peel and dice potatoes into small pieces and place in boiling water, along with carrots and onion quarter. Cook until fork tender and drain, reserving 1/4 cup of cooking water. Let cool until near room temperature then place in blender with reserved water. Blend on pulse cycle until similar in consistency to mashed potato then add in whole roasted pepper. Blend together until smooth. Add in nutritional yeast if desired. Place in bowl and enjoy with fresh vegetables or chips.
RECIPE BACKSTORY
While I love regular hummus, I figured that not everyone loves the beans. With this in mind, I set out to determine other methods for making a delicious hummus with a similar texture minus the beans. This recipe is even kid tested and approved!
