Roasted Veggie and Black Bean Burrito

  • 2 whole sweet potatoes chopped in bite sized pieces
  • 2 whole jalapeno peppers minced
  • 1 whole red pepper diced
  • 1 whole red onion (small)
  • 2 teaspoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Pinch of salt and pepper
  • 1 can of rinsed black beans
  • ½ cup fresh cilantro
  • 2 teaspoons of lime juice
DIRECTIONS
  1. Roast first group of ingredients at 425 for 40 to 50 minutes stirring at half way point…check potatoes for tenderness.
  2. Add second set of ingredients and wrap in wheat burrito shells
  3. Add cheddar cheese and sour cream in wrap if desired…top with salsa
