Rock-A-Dilly Potatoes

  • 5 cups sliced canned potatoes
  • 1 1/2 cup (12 oz) sour cream
  • 1 1/4 cup shredded swiss cheese (divided)
  • 1/2 cup shredded carrot
  • 1 tsp chopped garlic
  • 2 Tbs minced fresh parsley
  • 1 tsp salt
  • 1 tsp dill weed
  • 1/2 tsp pepper
  • 1/4 tsp paprika (optional)
DIRECTIONS
  1. Combine sour cream, 1 cup swiss cheese, carrot, garlic, parsley, salt, pepper, and dill weed.
  2. Mix and combine with potatoes.
  3. Transfer to a greased 8-inch square baking dish.
  4. Top with remaining cheese and paprika
  5. Bake uncovered at 350F for 25-30 minutes or until bubbly.
