Rocky Road Bars
  • 2 cups semisweet chocolate chips, divided
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 cup granulated sugar
  • 6 tablespoons butter, softened
  • 1 1/2 teaspoons vanilla
  • 2 eggs
  • 2 cups miniature marshmallows
  • 1 1/2 cups walnuts, coarsely chopped
  1. Preheat oven to 375 degrees. Grease 13x9" baking pan.
  2. Microwave 1 cup morsels in medium, uncovered, bowl on high for 1 minute. Stir. Morsels may retain some of their original shape. If necessary, microwave additional 10-15 second intervals, stirring just until morsels are melted. Cool to room temperature. Combine flour and baking powder in small bowl.
  3. Beat sugar, butter and vanilla in large mixer bowl until crumbly. Bean in eggs. Add chocolate; beat until smooth. Gradually beat in flour mixture. Spread batter into baking pan.
  4. Bake for 16-20 minutes or until wooden pick inserted in center comes out slightly sticky. Remove from oven; sprinkle immediately with marshmallows, nuts and remaining chips. Return to oven for 2 minutes of until marshmallows begin to melt. Cool in pan on rack for 20-30 minutes. Cut into bars with wet knife. Serv
