Rollover Chicken Delight
INGREDIENTS
- 2 boneless/skinless chicken breasts
- 2 tsp. garlic (chopped)
- 2 pkgs of ready to bake croissant rolls (8 each)
- 1 pkg frozen mixed vegetables (broccoli, carrots, etc.)
- 1 small tomato (diced)
- 1 pkg Hidden Valley Ranch Seasoning Mix
DIRECTIONS
- Cook chicken and garlic for flavor. Set aside. Boil water and place heat mixed vegetables for five minutes.
- Drain.
- Set aside.
- Dice the tomato and set aside.
- Mix Hidden Valley Ranch Seasoning per package directions.
- Open croissants and place them so that the triangles form a ring shape, touching each other.
- Put 8 croissants next to one another and the next 8 on top (forming an outer ring to "rollover" the "filling"). Cut chicken into cubes and place with vegetables on the croissant ring.
- Add half of the Hidden Valley Ranch
- Mix and roll the dough to close the top.
- Bake at 375 degrees for 20 minutes.
- Cool for 15 minutes.
- Place lettuce in center of the ring.
- Just before serving, dress the salad with the remaining half of the Hidden Valley Ranch Mix.
- Garnish with parsley on the outer edge.
