Romaine Salad with Orange and Raisin

INGREDIENTS
  • 1 Tbsp orange zest
  • ¼ cup shallots, thinly sliced
  • 4 Tbsp red wine vinegar
  • ¼ cup raisins, softened in hot water and drained
  • 1 head romaine lettuce, torn
  • 2 Tbsp orange juice
  • ½ tsp salt
  • ¼ tsp paprika
  • ¼ tsp ground cumin
  • ¼ cup chopped basil
  • ¼ cup olive oiil
  • fresh ground pepper
DIRECTIONS
  1. In a small bowl, toss zest, shallots, and vinegar
  2. together.
  3. Let sit for five minutes.
  4. Drain vinegar, and combine it with the orange,
  5. salt, paprika, cumin, basil, and oil.
  6. In a large bowl, toss romaine with shallot-zest
  7. mixture, raisins, and vinaigrette.
  8. Season with pepper.
