Romanian Beet Salad

  • 2 medium sized beets
  • 2 carrots
  • toasted walnuts
  • golden raisins
  • beet greens-if you can get them, they tend to be hard to come by, you could substitute any other hardy,leafy, like kale or collards
  • dressing:
  • hot brown mustard
  • honey
  • balsamic vinegar
  • cracked pepper
  • salt
  • olive oil
  • fresh dill
  1. If you are using greens chop them into large pieces and boil them to get rid of bitterness and toughness
  2. either grate by hand or food process the beets and carrots
  3. whisk together the dressing ingredients to taste, I like a mustardy kick
  4. toss greens, beets/carrots, walnuts and raisins into a bowl, pour dressing over the top and mix well
So this salad isn’t exactly Romanian but my friend made it for me while I was in Romania and we got all of our ingredients at the Gypsy market so that’s how I think of it.
