Ropa Vieja - A Cuban Family Favorite

  • *Two pounds flank steak, cut into 4 pieces
  • *1 red bell pepper, seeded and sliced
  • *1 yellow bell pepper,seeded and sliced
  • *1 yellow onion, sliced
  • *2 jalapenos, seeded and sliced
  • *2 cloves garlic, minced
  • *1 (18 ounce) jar diced tomatoes
  • *1 tablespoon apple cider vinegar
  • *1 teaspoon dried oregano leaves
  • *2 teaspoons ground cumin
  • *1 bay leaf
  • *2 1/2 teaspoons sea salt
  • *1/4 cup pimento-stuffed green olives, halved
  • *fresh cilantro, for garnish
DIRECTIONS
  1. 1. Place all of the ingredients except the olives in a slow cooker, with the beef on the bottom.
  2. 2. Cover and Cook, undisturbed, on low for 7 hours. Add the olives and cook for an additional hour.
  3. 3. Skim any fat off of the top of the sauce, then shred the meat with 2 forks and return it to the sauce before serving.
