Rotini & Tuna Salad

INGREDIENTS
  • 12 oz tuna in water
  • 2 1/2 cups rotini pasta, uncooked
  • 1 cup frozen green peas, thawed & cooked
  • 1 cup sliced celery
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped onions
  • dressing:
  • 1 cup reduced fat/fat free mayo
  • 3 tbsp lemon juice
  • 1/2 tsp thyme
  • 1/8 tsp salt
  • 1/8 tsp pepper
DIRECTIONS
  1. Cook pasta and drain. Combine tuna, peas, celery, pepper & onion. Combine all dressing ingredients and fold into salad. Cover and refrigerate for one hour before serving.
  2. This is a really great low-fat snack, lunch, or side dish! I used whole wheat pasta and it worked awesome!
