Russian Sour Cream Pancakes

- 2 eggs
- 1 pack (about 250g) sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 100g sugar
- 250g flour
- 20g butter, melted and cooled slightly, plus extra for greasing
DIRECTIONS
- Mix eggs, sugar, salt, soda and sour cream together; then add flour, mix and add 2 tablespoons of melted butter.
- Leave to stand for 20 minutes.
- Cook on the well-heated frying pan pouring the batter with a tablespoon (5-6 pancakes at a time).
- Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until golden on the underside, 1 to 2 minutes more.
- Transfer to a baking sheet or platter; cover loosely with aluminium foil, and keep warm in oven. Continue with more oil and remaining batter.
