Ruth's Chris Steak House Sweet Potato Casserole

INGREDIENTS
  • 3 cups peeled, mashed cooked sweet potatoes (bake or boil them first)
  • 1/3 cup half and half or cream
  • 1/3 cup (or to taste) packed brown sugar
  • 2 Tbs melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 egg whites lightly beaten
DIRECTIONS

  2. 3 cups peeled, mashed cooked sweet potatoes (bake or boil them first)
  3. 1/3 cup half and half or cream
  4. 1/3 cup (or to taste) packed brown sugar
  5. 2 Tbs melted butter
  6. 1 tsp vanilla extract
  7. 1/2 tsp salt
  8. 2 egg whites lightly beaten
  9. Combine these ingredients and stir well. Spoon into an 8 inch baking dish lightly coated with butter.
  10. Combine the following with a pastry cutter until it resembles coarse meal:
  11. 1/4 cup packed brown sugar
  12. 1/4 cup flour
  13. 2 Tbs chilled butter
  14. Stir in 1/3 cup toasted, chopped pecans and top the potatoes with it.
  15. Bake at 350 degrees for 30 minutes - serves 6-8
