Ruth Chris' Sweet Potato Casserole by Lisa

INGREDIENTS
  • CRUST:
  • 1 C Brown Sugar
  • 1/3 C flour
  • 1 C Chopped Pecans
  • ¼ C melted butter
  • SWEET POTATO MIXTURE:
  • 3 C Mashed Sweet Potatoes (can use canned to save time, just drain)
  • 1 C Sugar
  • ½ tsp. Salt
  • 1 tsp. Vanilla
  • 2 Eggs (well beaten)
  • ½ C melted butter
DIRECTIONS
  1. Combine brown sugar, flour, pecans, and butter in mixing bowl and set aside.
  2. Preheat Oven to 350 degrees
  3. Mix Sweet Potato Ingredients in order listed with mixer.
  4. Pour Mixture into buttered baking dish
  5. Sprinkle Crust mixture evenly on top (Also add marshmallows on top if you like)
  6. Bake for 30 minutes. Allow to set at least 30 minutes before serving.
