S'mores Cookies
  • 1 cup Butter
  • 1 1/2 cups Brown Sugar
  • 2 Eggs
  • 2 tsp Vanilla
  • 1 1/2 cups Graham Cracker Crumbs
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 2 1/4 cups Flour
  • 3 oz Marshmallow Bits
  • 2 cups Milk Chocolate Bars, coarsely chopped (about 6 bars)
  • 8 large Marshmallows, cut in half
  • 2 Milk Chocolate Bars, broken into pieces
  1. Oven Temperature: 350°F
  2. *Preheat oven to 350 degrees; Spray pan with cooking spray
  3. *Cream butter and sugar together until light and fluffy, about 2 minutes
  4. *Turn speed down and add eggs and vanilla, mixing until smooth
  5. *With mixer on med-low speed, add graham cracker crumbs, baking soda, and salt until combined
  6. *Turn mixer to low and add flour until just combined
  7. *Stir in marshmallow bits and chopped chocolate bars
  8. *Press mixture evenly into pan if using muffin top or regular muffin pan
  9. *Bake for about 8 minutes (more or less depending on amount used for each cookie, you want the cookie to have about 4-5 minutes left to cook)
  10. *Press marshmallow half onto the top and continue to bake until marshmallow is puffed and slightly golden and cookie is lightly golden
  11. *Remove and immediately press reserved chocolate onto the top of the cookie, it will melt from the heat of the cookie
  12. *Allow cookies to cool in pan for at least 10 minutes. Loosen edges with knife and carefully remove from pan, transferring to a wire rack to continue cooling
  13. Recipe Tips
  14. *If using muffin top pan, it will be about 1/3 cup of dough per cookie
  15. *If using regular muffin pan, just fill about half way - or use the 1/3 cup of dough as guideline of how far to fill
  16. *If just using regular cookie sheet, place as you would for normal cookies - it will work out the same, they just won't be deep dish cookies is all
