SANDWICH SPREADS, CRACKER SPREADS, IN WRAPS Elaine Mazur style
INGREDIENTS
  • Egg Salad
  • 2- 3 eggs per person eating
  • Opt: Garlic powder or salt or pepper or pinch of red pepper flakes or paprika
  • Mayo- (Miracle whip for us Northerners! Hellmans for the South)
  • Sandwich bread, crackers, wrap, lettuce wrap or in a bowl w/ lettuce, tomato, frozen peas or other veggies
  • Chicken/ Turkey/ Duck Salad
  • Leftover chicken/ turkey/ duck cut up or shredded
  • Celery diced
  • Red seedless grapes cut in 1/2
  • Opt: Crushed sweetened pineapple
  • Opt: Garlic powder or salt or pepper or pinch of red pepper flakes or paprika

  • Sandwich bread, crackers, wrap, lettuce wrap or in a bowl w/ lettuce, tomato, frozen peas or other veggies
  • Ham or Bologna Salad
  • Cut up left over ham (even pineapple ham) or bologna
  • Opt: Sweet pickle relish
  • Opt: Crushed sweetened pineapple

  • Sandwich bread, crackers, wrap, lettuce wrap or in a bowl w/ lettuce, tomato, frozen peas or other veggies
  • Tuna Salad
  • 1 can tuna in OIL!
  • Celery diced
  • Opt: Garlic powder or salt or pepper or pinch of red pepper flakes or paprika
  • Opt: onions diced
  • Opt: Green peppers diced
  • Opt: Crushed sweetened pineapple
  • Mayo- (Miracle whip for us Northerners! Hellmans for the South)

  • Rabbit Salad
  • Leftover cut up or shredded rabbit
  • Celery diced
  • Opt: onions diced
  • Opt: Red seedless grapes cut in 1/2
  • Opt: Crushed sweetened pineapple
  • Opt: Garlic powder or salt or pepper or pinch of red pepper flakes or paprika

DIRECTIONS
  1. Egg Salad
  2. 1st ya gotta hard boil the eggs- put the eggs into large enough pot cover them w/ 2 or more inches of lukewarm water bring to a boil over med or med/ high heat (if heats to high you'll crack the eggs)
  3. Turn dwn heat and simmer for about 10- 15 mins
  4. Then strain and run cold water over eggs. When cool enough to handle peel eggs under running cold water. Put peeled eggs into a bowl
  5. Smash eggs w/ a fork and add any options you like (I usually only add salt) mix together then add mayo. mix in mayo then serve in any of the ways included
  6. Chicken/ Turkey/ Duck Salad
  7. After chopping up the meat add some diced celery and the grapes. Then add any option you like. Then add mayo and stir well and serve in any of the ways included
  8. Ham or Bologna salad
  9. After cutting up meat add any option you like. Then stir in mayo and serve in any of the ways included
  10. Tuna Salad
  11. Strain tuna add some diced celery then add any option you like. Then stir in mayo and serve in any of the ways included
  12. Rabbit Salad
  13. After chopping up the meat add some diced celery and any option you like. Then stir in mayo and serve in any of the ways included

I grew up eating these sandwich ect spreads. Mainly for lunch but also for a quick dinner or even snacks. .
