SNOWBALL LOAF

INGREDIENTS

- 2 pkg. yeast
- 1/4 cup warm water
- 1 cup scalded milk
- 1/2 cup sugar
- 1/4 cup shortening
- 1 1/2 tsp. salt
- 4 - 4 1/2 cups flour
- 1 tsp. grd. lemon peel
- 2 beaten eggs
- 1 cup mixed diced candied fruit and peel
DIRECTIONS
- Soften yeast in the warm water. Combine milk, sugar, salt and shortening and cool to lukewarm.
- Add 2 cups flour and the lemon peel.
- Beat until smooth.
- Add eggs, beat well.
- Add yeast, fruit and peel and remaining ingredients to make a soft dough.
- Cover and let rest for 10 minutes.
- Knead on a floured surface for 6 to 8 minutes until smooth and elastic.
- Place in a lightly greased bowl turning once to grease the surface.
- Cover and let rise until double (2 hrs)
- Punch down and divide in half.
- Let rest for 10 minutes.
- Shape into 2 balls.
- Place on a greased cookie sheet.
- Pat tops to flatten slightly.
- Cover and let rise until almost double (2 hrs).
- Bake at 350 degrees for 25 to 30 minutes.
- While warm frost with confectioners sugar (powdered sugar) and milk.
