SPICY SHRIMP LETTUCE WRAPS

- 1 lb of good size shrimp peeled and de-veined
- 6 oz Greek Yogurt
- 1/4 cup chopped cilantro
- 1 - 2 tablespoons fresh lime juice
- 1/4 to 1/2 teaspoon cayenne pepper or to taste
- 5 cups (approximately) of thinly sliced cabbage
- Boston or Bibb lettuce for the wraps (these have the nicest cups for filling) or lettuce of your choice
- 4 teaspoon coconut oil
- salt and pepper to taste
DIRECTIONS
- 1.Mix yogurt, cilantro, cayenne, lime juice and salt in a bowl and set aside.
- 2.Heat 2 teaspoons of coconut oil in a medium non-stick skillet and add cabbage. Cook for about four minutes or until the cabbage is barely wilted. Season with salt and pepper and set aside.
- 3.Cut shrimp into bite size pieces (about 3 cuts per shrimp). Saute in 2 teaspoons of coconut oil and season with salt, pepper and a dash of cayenne pepper over medium heat just until done. This only takes a few minutes, so do not take your eyes away.
- 4.Build your lettuce wrap. First place some of the sauce, then a scoop of cabbage, then the shrimp and top with the cilantro sauce. Roll up and enjoy!
