STUFFED CABBAGE

  • 1 head green cabbage cored
  • 1 cup golden raisins
  • 2-3 tbs white vinegar
  • 2 tbs sugar
  • 1/2 stick butter
  • large yellow onion cut up about 1 inch pieces
  • 1 Family size can of Campbells Tomato Soup
  • 1 1/2 lbs ground beef
  • 1/2 cup instant rice
  • Garlic salt and pepper
  • 1 large egg
DIRECTIONS
  1. Cut cabbage head in half and core. Low boil cabbage until soft .
  2. about 10 minutes. So it is pliable but still not mushy. Drain and cool.
  3. Mix raw ground beef with instant rice, egg, garlic salt, pepper.
  4. Make mini "meatloaves" about half the size of your palm. Bigger than a meatball, about 5 bites worth.
  5. take a leaf of cabbage and wrap each meatloaf like a burrito.
  6. Saute onion in butter with a little salt and pepper until golden. Place cabbage rolls in bottom of the pot and Add raisins, vinegar, sugar and tomato soup. Cover and simmer about 30-45 minutes. Add extra cabbage cut into 5 inch chunks during the last 20 minutes of cooking.
