  • 1 CUP VEGETABLE OIL
  • 2 TSP VANILLA
  • 2 CUPS SQUASH, FINELY GRATED
  • 3 CUPS SELF RISING FLOUR
  • 1 TBLSPN CINNAMON
  • OPTIONAL- 1 CUP CHOPPED NUTS
DIRECTIONS
  1. PREHEAT OVEN TO 325 DEGREES
  2. BLEND EGGS IN LARGE BOWL ON MED. SPEED TILL FLUFFY
  3. MIX IN SUGAR, OIL, VANILLA
  4. SLOWLY STIR IN FLOUR & CINNAMON UNTIL JUST MOIST
  5. STIR IN SQUASH UNTIL EVENLY MIXED, ADD NUTS IF YOU LIKE
  6. POUR INTO 2 WELL GREASED LOAF PANS
  7. BAKE 55 MINUTES, TILL GOLDEN & PICK COMES OUT CLEAN
