SZECHWAN ORANGE CHICKEN

INGREDIENTS
  • 1/4 cup frozen orange juice, thawed
  • 1/4 cup rice wine vinegar
  • 2 tbs canola oil
  • 2 tbs soy sauce
  • 1 tbs Asian chile paste
  • Zest of 1 orange
  • 6 skinless chicken thighs
DIRECTIONS
  1. In a bowl, whisk first 6 ingredients.
  2. Place in plastic bag.
  3. Add chicken, seal and shake to coat.
  4. Refrigerate 2 hours.
  5. Heat outdoor grill.
  6. Coat grill rack with oil.
  7. Remove chicken from bag, reserve marinade.
  8. Grill 20 min. covered, turning and basting with marinade every 5 min. until done.
  9. In a saucepan, boil remaining marinade 1 min. Drizzle over chicken and serve.
  10. GARNISH---with orange sections and sliced scallions.
