Salmon Loaf

INGREDIENTS
  • 2 cans of salmon, drained & flaked
  • 2 eggs, beaten
  • 1/2 cup sour cream
  • 1 cup breadcrumbs
  • 2/3 cup milk
  • 1/2 cup each, finely chopped onions and celery
  • 1 Tablespoon Old Bay Seasoning
  • 1 teaspoon lemon pepper
  • 4 teaspoons lemon juice
DIRECTIONS
  1. Mix well and put in greased 2 qt casserole dish.
  2. Top with Pillsbury cresent rolls that have been separated into triangles.
  3. Bake @ 350 for 25-30 minutes
RECIPE BACKSTORY
I don't know about anyone else but I get tired of meat loaf. This is a quick to prepare and tasty substitute for ground beef and then I always have canned salmon on hand.
