Salmon with Mustard Vinaigrette

  • 2 Tbsp Dijon mustard
  • 1 Tbsp freshly squeezed lemon juice
  • 2 Tbsp white wine vinegar or balsamic
  • 2 Tbsp extra-virgin olive oil
  • 2 Tbsp vegetable or chicken broth
  • 2 Tbsp chopped shallots
  • 2 Tbsp fresh chives
  • Salt and pepper to taste
  • 4 salmon filets, about 4 to 6-oz each
  1. In a small bowl, whisk together mustard, lemon, and vinegar.
  2. Slowly whisk in the olive oil and vegetable broth.
  3. Stir in shallots and chives.
  4. Season with salt and pepper.
  5. Brush salmon filets with some of the mustard vinaigrette and generously season with salt and pepper.
  6. Preheat grill and spray grate with non-stick cooking spray.
  7. Grill filets 3 to 4 minutes per side or in a 350'F oven for 5 to 7 minutes per side.
  8. To serve, place filet on plate and drizzle with remaining vinaigrette.
This is one of the first fish recipes I tried. It has been one of my favorites for 4 years.
