Salsa Eggs Casserole
  • ½ cup salsa
  • ½ cup sour cream
  • ½ cup cottage cheese
  • 6 eggs
  • 2 cups of shredded Mexican cheese mix (comes in a bag at store)
  1. Preheat oven to 350.
  2. Spray 9x9 baking dish with pan and spread salsa over bottom. Top with cheese. Scramble eggs well and mix in sour cream and cottage cheese. Pour evenly over the cheese and salsa. Bake for 45 mins. or until brown.
My sister in law gave this to me years ago and it has become one of my favorites. Its so quick and easy and everyone likes it.
