Salsa
INGREDIENTS

  • Preparation Time: 15 minutes
  • 3 medium size tomatoes
  • 1 mango
  • 1 red or yellow pepper
  • 1/4 cup red onion
  • 1 Hot pepper
  • 1 TBSP raisins or diced dates
  • 1 lime juiced
  • 1/4 cup fresh cilantro
  • 3 Tbsp chives or green onion
  • 1/4 tsp cayenne pepper
  • 1/2 tsp chipotle chili powder
  • dash of sea salt and olive oil is optional
DIRECTIONS
  1. Dice the tomatoes, mango, bell pepper, onion, hot pepper, raisins.
  2. Rough chop the cilantro, snip the chives or green onion.
  3. Toss all ingredients in a large bowl.
  4. Stir in the lime juice, spices and optional salt/oil.
  5. Refrigerate and allow the flavors to blend.
  6. Taste it and add more spice if you wish.
  7. Stays fresh in the fridge for a couple of days.
RECIPE BACKSTORY
This recipe is very versatile. It is not necessary to follow it exactly. No mango? use peach, pineapple, pear or more raisins/dates No worries if you don't have or like cilantro, leave it out.
