Salt Cured Long Beans With Garlic And Ginger

  • 1lb. long beans or green beans
  • 40g kosher salt
  • 10g ginger (minced)
  • 10g garlic (minced)
  • 30ml soy sauce
  • 30g brown sugar
DIRECTIONS
  1. Cut the tops and ends of green beans and if using long beans cut the long beans into 4-inch pieces and line the beans in a single layer on a shallow pan.
  2. Then cover with the salt and let sit for 2 hours and rolling them occasionally.
  3. Rinse the access salt off after two hours and pat dry with a paper towel.
  4. Mix the beans with the sugar, soy sauce, garlic, ginger and marinate in a tightly closed container.
  5. Refrigerate for at least 12 and up to 24 hours and serve cold. Can be keep in a sealed container, refrigerated for up to 3 weeks.
