Sandi G's Pineapple, Cranberry, Zucchini Bread

  • Ingredients:
  • 3 large Eggs
  • 1 Cup Veg. Oil
  • 1 Cup Truvia Baking Blend
  • 2 Cups Shredded Zucchini
  • 1 8 oz can Crushed Pineapple (Do Not Drain)
  • 1 Cup Dried Cranberries
  • 2 teaspoons Vanilla
  • 3 Cups Flour
  • 1/4 teaspoon Baking Powder
  • 2 teaspoon Baking Soda
  • 1 teaspoon salt
  • 1 teaspoon teaspoon Nutmeg
  • 1 1/2 teaspoons Ground Cinnamon
  • 1 teaspoon Ground Ginger
DIRECTIONS
  1. Direction's
  2. Beat eggs, sugar & oil well, Stir in Zucchini, Pineapple & Vanilla, add all dry ingredients mix until well blended.. stir in Cranberries.
  3. Pour into lightly greased loaf pans & bake at 350 for approx. 30-45 or until toothpick inserted comes out clean.
  4. These Freeze very well.
RECIPE BACKSTORY
I love Zucchini bread.. But felt it needed more spice's & color, and NO Sugar, I use Truvia Baking Blend instead of sugar .. so I played with recipe I had until I got the right amount of spice, then added pineapple & cranberries.
