Sandi G's Pineapple, Cranberry, Zucchini Bread

- Servings: 6 Mini Loaf Pans

- Ingredients:
- 3 large Eggs
- 1 Cup Veg. Oil
- 1 Cup Truvia Baking Blend
- 2 Cups Shredded Zucchini
- 1 8 oz can Crushed Pineapple (Do Not Drain)
- 1 Cup Dried Cranberries
- 2 teaspoons Vanilla
- 3 Cups Flour
- 1/4 teaspoon Baking Powder
- 2 teaspoon Baking Soda
- 1 teaspoon salt
- 1 teaspoon teaspoon Nutmeg
- 1 1/2 teaspoons Ground Cinnamon
- 1 teaspoon Ground Ginger
DIRECTIONS
- Direction's
- Beat eggs, sugar & oil well, Stir in Zucchini, Pineapple & Vanilla, add all dry ingredients mix until well blended.. stir in Cranberries.
- Pour into lightly greased loaf pans & bake at 350 for approx. 30-45 or until toothpick inserted comes out clean.
- These Freeze very well.
RECIPE BACKSTORY
I love Zucchini bread.. But felt it needed more spice's & color, and NO Sugar, I use Truvia Baking Blend instead of sugar .. so I played with recipe I had until I got the right amount of spice, then added pineapple & cranberries. I make these every year for our Christmas Party and give them to our Guest... They love them !!
