Sausage Stir Fry
  • Sausages
  • Par-boiled mixed vegetables
  • Diced onion
  • Crushed garlic
  1. Pan fry some sausages until cooked through.
  2. Meanwhile, par boil some root vegetables - whatever you have in the fridge.
  3. Potato, sweet potato, carrot, pumpkin etc.
  4. Slice the sausages in to chunks.
  5. Add the parboiled vege (and a little vegetable oil, depending on how fatty the sausages are - vege should brown up if possible) and onion.
  6. Stir fry until cripy.
  7. If adding non root vegetables, hold until the end - broccoli and cauliflower are great in this.
  8. Add a little crushed garlic.
  9. Serve and enjoy!
This is a great scalable meal - it can be ramped up with a few extra potatos if family drops around unexpectedly - and very quick and easy. Takes about 25 minutes from beginning to end!
