Sausage and Peppers
  • 2 TBSP olive oil
  • 6 Italian sausage links
  • 1/2 large yellow onion, cut into 1/4 inch slices
  • 1 large red pepper cut into 1/2 inch slices
  • 1 large yellow pepper cut into 1/2 inch slices
  • 2 hot peppers, sliced into 1/4 inch slices
  • 4 large garlic cloves, minced
  • Kosher salt and freshly ground black pepper
  • 1 TBSP balsamic vinegar
  • 1 TBSP tomato paste
  1. Heat oil in large cast iron skillet over medium high heat. Add sausages and cook until well browned on all sides, about 10 minutes. Remove sausages from pan and set aside.
  2. Pour off all but 1 tablespoon of oil. Add onions and cook, stirring, until golden, about 3 minutes.
  3. Stir in the tomato paste and cook one minute more.
  4. Add peppers, garlic and season with salt and pepper to taste.
  5. Cook until peppers are wilted, about 5 minutes.
  6. Return sausages to pan, cover and cook over medium heat, stirring frequently until sausages are cooked through, about 12 more minutes.
  7. Stir in vinegar.
  8. Serve on crusty roll.
