Sauteed Artichokes
INGREDIENTS
  • Servings: 4
  • 4 tender artichokes
  • 4 Tbsp. butter
  • 1/3 c. olive oil
  • 2 or 3 Tbsp. water
  • 1/2 c. parsley, chopped
  • 3 cloves garlic, chopped
  • pepper and salt to taste
  • 1/2 c. white wine
DIRECTIONS
  1. Wash artichokes thoroughly. Cut about one inch from the
  2. top and discard. Trim stems so that artichokes will stand
  3. flat. Arrange in heavy skillet and add butter, olive oil,
  4. parsley, garlic, salt and pepper. Cover and cook slowly over a
  5. low fire until tender, about 90 minutes. Add wine after about
  6. half cooking time. Serves 4.
