Sauteed then Baked Cod with Asparagus, Mushrooms and Onions

- Cast iron skillet
- Cod
- Asparagus, remove hard stems
- 1/2 cup Mushrooms
- 1/2 Sliced Onion
- 1 Lemon
- 2-3 tablespoons Butter
- 1 teaspoon of Olive Oil
- 1/2 teaspoon Red Pepper Flakes
- Salt
- Pepper
DIRECTIONS
- Marinate Cod with lemon juice for a few hours
- Preheat oven 425
- Sautee marinated cod with olive oil, butter and red pepper flakes for a few minutes over medium heat. Flip cod over once.
- Place mushrooms around pan next to cod, make sure mushrooms are tossed in butter mixture in pan.
- Place onion on top of cod
- Place asparagus on top of onions
- Season with salt and pepper
- Wrap foil over pan
- Place in oven for 10- 12 minutes
