Savannah Red Rice
INGREDIENTS
  • Cooking Time: 1 hour
  • Servings: 6 to 8
  • Preparation Time: 20 minutes
  • 1/4 lb. bacon
  • 1/2 cup chopped onions
  • 2 cups raw rice
  • 2 cups red tomatoes
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. Tabasco
DIRECTIONS
  1. Fry bacon until crisp.
  2. Remove from pan.
  3. Cook the onions tender in bacon fat.
  4. Add washed rice, tomatoes, seasonings and crumbled bacon.
  5. Cook over low heat about 10 minutes.
  6. Pour into 1-quart casserole, cover tightly.
  7. Bake at 350 degrees for 1 hour, stirring with fork a couple of times.
