Savory Crepe
INGREDIENTS

  • 1 whole egg
  • 150 g egg whites
  • 5 g gluten free pancake mix
  • 25 g savory sauce (see recipe)
  • 50 g ratatouille (see recipe)
  • Additional herbs on hand (rosemary, thyme chives etc)
  • salt and pepper to taste
DIRECTIONS
  1. blend whole egg and egg whites well with pancake mix. Pour into a 12-14 inch skillet. cook on med high for 1 min. Add ratatouille, savory sauce and top with desired herbs, salt and pepper.
  2. cook for approx. 4 more min. Fold over edges into thirds, plate and enjoy!
