Savory Mocha-Chili Chicken Brownie Bites

  • 1/2 cup butter
  • ¼ cup olive oil
  • 4 squares bitter-sweet chocolate
  • ¼ cup cocoa powder
  • 1 tablespoon instant coffee powder
  • 1 tablespoon Chipotle chili powder
  • 3/4 cup all purpose flour
  • 1/4 teaspoon baking powder
  • 2 eggs
  • 1/3 cup coarsely chopped almonds
  • 1 pound chicken cutlets, pounded thin and cut into bite-sized pieces and patted dry
  • 1 teaspoon salt
DIRECTIONS
  1. Melt butter and chocolate together. Stir in oil.
  2. In a small bowl sift together flour, cocoa, coffee powder, chipotle chili powder and baking powder together.
  3. In a large mixing bowl, beat the eggs.
  4. Stir in the flour mixture, and the cooled chocolate mixture.
  5. Fold in Almonds.
  6. Lightely salt chicken pieces.
  7. Dredge the chicken in the batter and place onto a greased sheet pan or in an Edge Brownie Pan!
  8. Cook in a 350 degree oven for 30-40 minutes until chicken and brownie coating is done.
  9. Serve as an appetizer or a savory dessert.
