Scalloped Potatoes
  • 1/3 cup finely chopped onion
  • 3 Tbsp butter or margarine
  • 1 cup grated cheddar cheese
  • 6 cups peeled and thinly sliced potatoes (1/4 inch)
  • 1 can cream of mushroom soup
  • ΒΌ cup milk
  • salt and pepper to taste
  1. Preheat oven to 350. In skillet melt margarine and lightly brown onion. Grease casserole dish then layer potatoes, sprinkle with salt and pepper, layer onion then cheese. Repeat layers until all items used, reserving 1/3 cup of cheese for topping. Blend soup and milk over low heat, and then pour over potatoes. Cover and cook 1 hour. Sprinkle with remaining cheese. Bake uncovered for an additional 15 minutes
