Scampi Italiano

  • 1/4 C butter
  • 2 cloves garlic, minced
  • Pinch cayenne pepper
  • 1 T parsley
  • 1/4 C sherry
  • 1/4 C lemon juice
  • 1 tsp salt
  • 1/2 C grated parmesan cheese
  • 2 lbs fresh (unfrozen) shrimp
  1. Saute shrimp in butter and garlic until they turn pink. Combine all other ingredients in bowl, mix well and add to shrimp. Heat for about 3-4 minutes until liquid boils. Double the recipe to feed guests.
This recipe came from the Nashua Telegraph Cookbook and I prepared this dish when I competed in the cooking contest. Didn't win, but it is a family favorite and so easy to make.
