Scottish Shortbread

INGREDIENTS
- 1/2 cup powdered sugar
- 1/2 cup fine granulated sugar
- 2 cups butter
- 1 cup rice flour
- 4 cups pastry flour
DIRECTIONS
- Preheat oven to 325. Mix sugars together in small bowl. Cream butter and sugars in large bowl. Mix two flours together in separate bowl. Gradually incorporated flours in butter-sugar mixture with your hands until dough is smooth. Do not overwork the dough. Pat dough into a small, shallow pan to a thickness of 1/2 inch (a round cake pan works well).
- Bake for one hour or until shortbread is lightly browned. Let shortbread cool in the mold the gently remove with a knife.
