Scottish Shortbread
  • 1/2 cup powdered sugar
  • 1/2 cup fine granulated sugar
  • 2 cups butter
  • 1 cup rice flour
  • 4 cups pastry flour
  1. Preheat oven to 325. Mix sugars together in small bowl. Cream butter and sugars in large bowl. Mix two flours together in separate bowl. Gradually incorporated flours in butter-sugar mixture with your hands until dough is smooth. Do not overwork the dough. Pat dough into a small, shallow pan to a thickness of 1/2 inch (a round cake pan works well).
  2. Bake for one hour or until shortbread is lightly browned. Let shortbread cool in the mold the gently remove with a knife.
