Scramble to Class Eggs

  • 1 tbsp. butter
  • 2 large eggs
  • 1 tbsp. sour cream or heavy cream (optional)
  • Kosher salt
  • Freshly ground black pepper
  1. In a small nonstick pan over medium heat, melt butter. In a medium bowl, whisk together eggs and sour cream, if using, until frothy.
  2. When butter is foamy, reduce heat to medium-low and add beaten eggs. Let sit until the very edges look like they are about to set, about 20 seconds, then stir using a wooden spoon or spatula until soft curds form. Season with salt and pepper and serve immediately.
