Sea Foam
  • 2 c. brown sugar
  • 12 c. water
  • 1 tsp. vanilla extract
  • ½ c. chopped nuts
  • 1 egg white
  1. Boil sugar and water together until a little dropped into cold water forms a soft ball (or until a candy thermometer reads 238°).
  2. Pour hot mixture over stiffly beaten egg white, beating while pouring. Add nuts and extract and beat vigorously until candy stiffens.
  3. When nearly set, drop by spoonfuls on paper. When cold, Sea Foam will harden.
I love sea foam and when a friend gave me this recipe I was so excited. It is just as good as the stuff in the store.
