Sesame Sugar Snap Peas

  • 500g (about 1 lb) sugar snap peas, trimmed
  • 2 tsp sesame oil
  • 1/4 cup (2 fl oz) lemon juice
  • 1 Tbsp sesame seeds, toasted
  • sea salt
  1. Steam the sugar snap peas over boiling water for 1-2 minutes or until tender and bright green. Toss with the sesame oil, lemon juice, sesame seeds and salt and serve warm.
I loooooooove to munch on raw snap peas (and therefore rarely have any left to cook with). However, here's a quick way to cook them that's simple and quite nice- it's a great substitute for edamame as an appetizer. You can use white or black sesame seeds. Serve as a snack with drinks or as a side dish.
