Shake It Off Sparkle Cupcakes

  • 1 and 1/2 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/4 cup yogurt (as an egg substitute)
  • Pink food coloring
  • Edible pink glitter or sprinkles
  • Vanilla buttercream frosting
  • Pink food coloring for frosting
DIRECTIONS
  1. Preheat the oven to 350°F and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream the butter and sugar together until light and fluffy.
  4. Stir in the vanilla extract, yogurt, and milk.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Add a few drops of pink food coloring to the batter and mix until the desired color is achieved.
  7. Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cupcakes to cool completely before frosting.
  9. In a separate bowl, tint the vanilla buttercream frosting with pink food coloring.
  10. Frost the cooled cupcakes with the pink frosting and sprinkle with edible pink glitter or sprinkles for extra sparkle.
