Shamrock Pie
INGREDIENTS
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1 1/2 cups water
  • 3 egg yolks, lightly beaten
  • 1/4 cup lemon juice
  • 1 tbs. butter or margarine
  • 1 1/2 tsp. grated lemon peel
  • 5 to 6 drops green food coloring
  • 1 pastry shell ( 9 inches), baked
  • Meringue:
  • 3 egg whites
  • 1/3 cup sugar
DIRECTIONS
  1. Directions
  2. 1. Combine sugar, cornstarch and water in a saucepan; stir until smooth
  3. 2. Bring to a boil, stirring constantly
  4. 3. Boil2 minutes or until thickened
  5. 4. Stir a small amount into egg yolks; return all to the pan
  6. 5. Cook and stir 1 minute.
  7. 6. Remove from heat; stir in lemon juice, butter, lemon peel and food coloring until smooth
  8. 7. Pour into crust
  9. 8. For meringue, beat egg whites until foamy
  10. 9. Gradually add sugar and beat until stiff peaks form
  11. 10. Spread over hot filling, sealing to the edges
  12. 11. Bake at 350 for 10 to 15 minutes or until lightly brown
  13. 12. cool and serve
