Shawn's Honey Peppered Salmon

  • 1/2 c olive oil
  • 3 T honey
  • 2T Dijon mustard
  • 3 cloves garlic, minced
  • 1 tsp cayenne (more or less to taste)
  • 1 tsp ground coriander
  • 2 T lemon juice
  • salt to taste
  • 12 oz salmon, cut into steaks
DIRECTIONS
  1. Heat oven to 350.
  2. Combine olive oil through salt in a shallow dish.
  3. Add salmon and marinate 30 minutes at room temperature.
  4. Bake on middle oven rack 6-7 minutes per side, or until salmon is opaque throughout.
RECIPE BACKSTORY
My husband discovered and perfected this recipe. I generally don't like salmon, but I always have seconds of this dish! Serve over rice, and garnish with fresh cilantro.
