Sheet Pan Chicken Fajitas

  • 1 of each red, orange, & yellow pepper, sliced
  • 1 red onion sliced
  • 1- 1.5 lb chicken breast sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt & pepper to taste
  • Optional toppings: Sour cream, cortina or shredded cheese, cilantro, salsa, pico, guac.
  1. Preheat oven to 400°F. Wash and slice the peppers, onions and chicken into slices.
  2. Place the peppers, onion and chicken onto a sheet pan and drizzle the olive oil over the mixture and stir well to coat everything with the olive oil.
  3. Sprinkle all of the seasonings on top of the peppers, onions and chicken and stir until everything is well coated.
  4. Cook the peppers, onions and chicken for 10 minutes then stir everything.
  5. Place the sheet pan back in the oven for an additional 10 minutes or until the chicken has reached an internal temperature of 160°F.
