Shredded Mexican Beef

INGREDIENTS
  • 4 lb Beef Roast
  • 2 tsp Black Pepper
  • 1 Onion, Diced
  • 1 Can Rotel Tomatoes & Green Chilies
  • 2 tsp Chili Powder
  • 1 tsp Cayenne Powder
  • 1 Tbsp Garlic Powder
  • 2 tsp Cumin
  • 1 Can Chipotle Peppers in Adobo Sauce (don't use the peppers, just the sauce of the can)
  • 1 Beef Bouillon
DIRECTIONS
  1. *Place roast in crockpot and add rest of ingredients
  2. *Cover about 1/3 - 1/2 of roast with water or broth
  3. *Cook on high at least 8 hours, until meat falls apart (add water or broth as necessary)
  4. *Shred meat and keep on low until serving
