Shrimp BLT lettuce wrap

  • 2/3 cup mayo
  • 1/2 tsp. Dijon Mustard
  • 1/2 tsp. Old Bay Seasoning
  • 1/4 tsp. liquid hot-pepper sauce
  • 1/4 tsp. salt
  • 1 T lemon juice
  • 1 lb. peeled, fully cooked shrimp, large, x'large your choice
  • 1 lb. tomatoes, chopped
  • 6 slices bacon, cooked, crumbled
  • 3 scallions, chopped
  • 1 head Boston lettuce, separated into leaves.
DIRECTIONS
  1. Stir together mayo, mustard, old bay, hot pepper sauce, salt and lemon juice in a large bowl. Add shrimp, tomato, bacon and scallion, toss to mix.
  2. Cover and refrigerate for 1 hr.
  3. Spread on 6 leaves of lettuce, roll up and place on platter.
