Shrimp Gumbo

- 1/2c oil
- 1/2c + 2tbsp flour
- 1 green pepper, diced
- 1 onion, diced
- 3 stalks of celery, diced
- 4 cloves garlic
- 1tbsp Cajun seasoning
- 1 quart stock
- 2tsp Worcestershire sauce
- 8-12oz andouille
- 2lb shrimp, peeled and deveined
- salt and pepper
- 3 green onions
DIRECTIONS
- Make roux:
- heat oil in pot over medium high heat. whisk in flour and lower heat. stir constantly. cook until copper, 20min
- add onions, peppers, and celery bringing heat up, cook 5min then add garlic and Cajun seasoning
- add stock and let simmer to thicken. add Worcestershire sauce
- Stir in Andouille sausage and cook 5 min
- add shrimp and simmer 5 more min
- serve with green onion as garnish
