Shrimp-Herb Fettuccine
INGREDIENTS
- 2 lbs shrimp
- 1/2 c butter, divided
- 3 garlic cloves
- 1/2 c white wine
- 1 c whipping cream
- 1 c shredded parmesan cheese
- 1/4 c fresh parsley
- 1/4 c fresh basil
- 1/4 c fresh chives
- 8 oz fettuccine
DIRECTIONS
- Melt 3 tbs. butter, add shrimp and saute 3-4 minutes.
- Remove with slotted spoon. Melt remaining butter in skillet over med-high heat; add garlic and saute.
- Add wine and cook 4 min. or until mixture is reduced by half.
- Stir in cream, cook 4-5 min. until thickend.
- Add shrimp, cheese and herbs, cook until cheese melts.
- Toss with pasta.
