Shrimp Mousse mold

  • 1 c best foods mayo
  • 3/4 c finely chopped celery
  • 3/4 c caramelized onion
  • 1 can condensed tomato soup
  • 1 lb small shrimp, poached and minced
  • 1 8 oz cream cheese
  • 1 1/2 pack Knox unflavored gelatin
  1. Heat tomato soup and cream cheese over double boiler, mixing until smooth
  2. Add celery, caramelized onion, mayo, and minced shrimp
  3. Mix gelatin with ½ cup hot water, add to mixture
  4. Pour into mold, chill for 5-6 hours
Another potluck recipe - I wanted to try to update it a bit and give it a "fresher" feel, abd I think that it takes an old classic and makes it fun again. Serve with crackers
